Rum Beer Bread Recipe (Because an artist has to eat too...)

Working in my studio 8 hours a day requires a few snack breaks to keep me going.  I'm a bread-a-holic, and I fell in love with beer bread when I went to a Tastefully Simple home party and was introduced to their beer bread mix.  All you had to do was add a beer to their mix and an hour later you had this incredible loaf of bread!  Well, when I ran out of it, and my Tastefully Simple rep disappeared, I went online to look for beer bread recipes to make myself.  There were tons of recipes to review, and all were MUCH cheaper to make from scratch than buying the mix.  I became obsessed with finding one as close to or better than the Tastefully Simple mix.  So after experimenting with several recipes, I have finally finessed one to my personal liking, which is on the sweeter side to have with my morning coffee. If you like a bread that is dense, moist, with a rich rum flavor, give this one a try!

NOTE:  If you're a fan of the Tastefully Simple beer bread, just combine the amounts of flour, baking powder, salt, white sugar, and a beer only to achieve that flavor and texture.

**For a yummy apple bread, just add a little cloves and ginger to the sifted ingredients, and stir in one diced apple at the end before baking.

 

RUM BEER BREAD

Preheat oven to 375 and spray a loaf pan with non-stick spray.

In a medium bowl, sift together:

3 cups Flour

1 Tablespoon baking powder

1 teaspoon salt

1 1/2 teaspoons cinnamon

Then stir in:

1/2 cup sugar

In a separate bowl combine:

1/4 cup melted butter (1/2 stick)

1/4 cup brown sugar

In a separate large bowl combine:

1 bottle of beer (I use Blue Moon, but any kind will do)

1/4 cup dark rum (depends how rummy you want it)

1 teaspoon vanilla extract

Stir sifted dry ingredients into beer mixture.

Stir in butter/brown sugar and mix thoroughly.

Pour into loaf pan and bake for 40-45 minutes, or until a toothpick comes out clean.  Remove from pan and cool on a rack for at least 15 minutes before cutting.

(For a harder crust, stir in half of the butter/brown sugar mixture and pour the other half on top).
